Executive Chef at Brazosport Regional Health System
Wins Medals at Culinary Competition
Executive Chef Phillip Salinas, CICP at Brazosport Regional won two bronze medals at Ben E. Keith Competition on January 14 in Conroe, Texas. The competition included 120 Texas Chefs and 16 different culinary categories.
 As an Executive Chef, continuing education is a requirement to uphold the certification. However, The American Culinary Federation (ACF) allows members to bypass the continuing education if the Chef’s can place in competitions.
Chef Phil entered in two carving categories: ice sculpturing and fruit carving. His ice sculpture was a bald eagle standing 40” tall, 20” wide, and 10” deep. It took him approximately one hour to complete and received a bronze medal.
 For the fruit carving competition, Chef Phil’s intricate designs were carved out watermelons, squash and other fruits. His exquisite work of art included a dragon carved out of a squash, an Indian head carved out of a watermelon and other amazing designs. It took him a total of eight hours to complete and he received a bronze medal.
In addition to the competition held in Conroe, Chef Phil was nominated and selected to serve as one of three Aramark Healthcare Executive Chefs to help create a culinary experience at the Wild Dunes Resort in Charleston, South Carolina. The exclusive event was held for approximately 80 Chief Nursing Officers around the country and gave Chef Phil the opportunity to showcase his talent.
 His dish included a Shrimp Mojito Salad with lightly grilled shrimp, shredded ice burg, shredded Julienne of Jicama, shredded Julienne of radish and a Mojito dressing. The dressing was mint, rum, cilantro, olive oil and vintage.
Chef Phil has been with the hospital for over a year and coordinates operations of the Brazos Café. His responsibilities include menu building, food production, caterings, banquet events, patient tray lines and many other activities.
